Spicy Garlic Chilli Crisps Fried Fish
Ingredients:
- 1 heap tbsp - Lao Gan Ma Chilli - Heap tbsp
- 1 whole bulb garlic - minced
- 1 whole seabass or any fish of your choice
- 1 tbsp light soy sauce
- Pinch of salt to marinate the fish
- 2 tbsp corn flour to coat the fish
- Oil for frying garlic and fish
Method:
- Marinate fish with salt and set aside
- Dry fish thoroughly with kitchen towel and coat with thin layer of corn flour. Pat away excess flour.
- Heat up oil, fry fish till golden and crispy and set aside
- Heat up 3 tbsp of the oil, fry garlic until golden colour. Drain away the oil and set garlic aside
- Heat up 1tbsp of garlic oil, fry the chilli crisp paste till fragrant and mix in the fried garlic
- Slowly pour in the light soy sauce from side of the wok and mix well.
- Add cooked chilli paste onto the fish and serve hot.
Been to few places to try different versions of chilli fried fish and simply love them all. Came back home and try to cook out a version that husband and myself will love and this is the most satisfying version so far.
