Steam Flower Clams in Garlic White Wine
Ingredients:
- 500gm Fresh Flower Clams
- 1 bulb garlic - Chopped
- 2 Bird's eye chillies - Chopped
- 1 bunch corriander - roughly chopped
- 2 stalks spring onions - cut in 1-inch length
- Chinese Shaoxing wine - 1 cup
- Salt to taste
- Soak clams in salt water for 3 hours (change water every 1/2 hour)
- Drain clams and set aside
- In a pot, heat up some oil and saute the garlic till fragrant
- Put in chillies and saute for 1 min and pinch of salt
- Pour in Chinese wine and clams and cover till all clams open
- Discard any unopened clams and adjust salt to taste
- Put in chopped corriander and spring onions and serve.
