Steam Flower Clams in Garlic White Wine



Ingredients:
  • 500gm Fresh Flower Clams
  • 1 bulb garlic - Chopped
  • 2 Bird's eye chillies - Chopped
  • 1 bunch corriander - roughly chopped
  • 2 stalks spring onions - cut in 1-inch length
  • Chinese Shaoxing wine - 1 cup
  • Salt to taste
Method:
  • Soak clams in salt water for 3 hours (change water every 1/2 hour)
  • Drain clams and set aside
  • In a pot, heat up some oil and saute the garlic till fragrant
  • Put in chillies and saute for 1 min and pinch of salt
  • Pour in Chinese wine and clams and cover till all clams open
  • Discard any unopened clams and adjust salt to taste
  • Put in chopped corriander and spring onions and serve.

The natural sweetness from the clams will flavour the stock and therefore need not add additional stock.
