Baked Salmon

Ingredients:
1 Salmon Steak
2-3 medium potatoes - sliced 3mm thickness
5 cloves garlic - minced
1 tsp smoked paprika
1/2 tsp cayanne pepper
1/2 tsp lime juice
2tsp honey
3tbsp olive oil
1tbsp freshly ground black pepper
Salt to taste
Chopped Chives or spring onions to garnish


Method:
Wash, peel and cut potatoes.
Boil the potatoes in a large pot of water with generous pinch of salt for 20mins and then drain.
Add garlic, paprika, cayanne pepper, lime juice, black pepper, salt, honey  and olive in a mixing bowl and mix well.
Mix in the potatoes into the marinate mixture and then lay them on the bottom and sides of a baking dish.
Wash the finsh and make incision on the fish.
Pour the remaining marinate over fish and make sure the marinate also get in between the slitted gap and let marinate for 15mins.
Lay fish in the centre of the baking dish and pour all the remaining marinate over the top of the fish.
Cover the top of the baking dish with aluminum foil or baking paper.
Preheat oven to 190 degree C and bake for 7-10mins depending on the size of the fish.
Uncover the fish and broil the fish for additional 5=7mins.
Garnish with spring onion or chopped parsley and serve.
